I add the zest of one lemon directly to the bowl and combine it with the blueberry mixture. The fact that my berries are frozen makes this vigorous mixing acceptable. I'd minimize stirring with fresh berries to preserve their delicate structure, mixing all the dry ingredients separately before gently folding them into the blueberries. This approach ensures the berries remain intact!

This delectable pie is oven-ready once I've beaten an egg over the entire crust and dusted it with turbinado sugar. My flour of choice is organic Emmer flour from Bluebird Farms in Twisp. The flour imparts a sweet, nutty richness, resulting in deeply flavored, rustic brown pastries.
