For the Pie Dough Base:

  • 1 1/4 cup flour
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cut into cubes
  • 2 teaspoons sugar
  • 23 tablespoons ice water

For the Cream Cheese Spread:

  • 8 ounces cream cheese, softened
  • Zest of 1 lemon (about 1 tablespoon)
  • 12 tablespoons fresh lemon juice
  • 1/3 cup powdered sugar (adjust to taste)
  • Optional: 1 teaspoon vanilla extract or orange extract for extra flavor

For the Fruit Topping:

  • Assorted fresh organic fruits (e.g., cherries, blueberries, strawberries, raspberries, peaches), washed, peeled peaches, and sliced as needed.

For the Fruit Glaze:

  • 1/4 cup water
  • 2 tablespoons cornstarch
  • 1/2 cup fruit juice (such as orange juice, apple juice, or pineapple juice)
  • 1 teaspoon lemon juice (optional for a touch of tartness)

Instructions

Prepare the Pie Dough

  • Buy a pie dough crust or make it from scratch

Roll out and bake the Pie Dough Base:

  • Preheat oven to 375°F
  • On a floured surface, roll out the chilled dough into a circle about 12 inches in diameter and 1/4 inch thick.
  • Carefully transfer the dough to a parchment-lined baking sheet or pizza pan.
  • Prick the dough with a fork to prevent it from puffing up while baking.
  • Bake for 15-18 minutes, or until the crust is golden brown. Remove from the oven and let it cool completely on a wire rack.

Prepare the Cream Cheese Spread:

  • Wash and dry the lemon. Use a fine grater or zester to grate the zest from fruit. Avoid grating the bitter white pith underneath the colorful zest.
  • In a mixing bowl, combine the softened cream cheese, lemon zest, and fresh lemon juice.
  • Add powdered sugar to taste, starting with 1/4 cup and adjusting the amount as needed to achieve your preferred sweetness.
  • If using, add vanilla extract or orange extract for additional flavor. Mix until all ingredients are well combined and creamy.

Prepare the Fruit Glaze:

  • In a small saucepan, combine the water, granulated sugar, and cornstarch. Whisk until the cornstarch is fully dissolved.
  • Stir in the fruit juice until everything is well combined.
  • Place the saucepan over medium heat. Bring the mixture to a boil, stirring constantly to prevent lumps from forming. 
  • Once boiling, reduce the heat to low and simmer for 1-2 minutes, or until the glaze has reached the desired consistency. It should coat the back of a spoon.
  • Remove the glaze from the heat and let it cool to room temperature. It will continue to thicken as it cools.

Assemble the Fruit Pizza:

  • Once the pie crust has cooled completely, spread the cream cheese mixture evenly over the crust, leaving a small border around the edges.
  • Arrange your sliced fresh fruits decoratively over the cream cheese layer. You can create patterns or scatter them across the pizza.
  • Drizzle the fruit glaze over the fruits.
  • Slice the fruit pizza into wedges and serve immediately. Enjoy the fresh, fruity goodness!
